This nationally recognised qualification provides the skills needed to be a qualified cook specialising in patisserie. The course provides a pathway to becoming a pâtissier or pastry chef and taking on a leading or supervisory role in the kitchen.

Led by industry experts, students will hone techniques in the pastry kitchen and learn how to craft delicious cakes, tarts, petit fours, and pastries, along with mastering intricate chocolate and sugar showpieces.

Along with the creation of cakes and pastries, students will develop skills in basic food preparation including cooking and presenting meats, poultry, and seafood. Core modules also cover essential topics such as financial management, leadership, hygiene, food safety, conflict resolution, coaching, and workplace safety.

Graduates can work in a diverse range of hospitality settings including patisseries, restaurants, hotels, catering operations, clubs, pubs, cafés, and coffee shops.

If you are passionate to become a master in cake decorating and making bread, this is the perfect opportunity for you. In 2024, you can complete a formal qualification in patisserie for FREE. You will learn to make a range of bread, pastries and cakes using commercial equipment and machinery in fully-equipped commercial kitchens. This one-year and a half year full time course provides students with broad cross section of theoretical knowledge and practical skills training in fully equipped commercial kitchens. You will gain the knowledge and skills to work in a commercial kitchen and be able to plan, prepare and bake specialised cakes, desserts, tarts, petit fours, pastries, yeast goods and chocolates. You will also learn how to follow health and food safety procedures, maintaining kitchen premises, developing hospitality industry knowledge, developing cost effective menus and preparing food according to dietary and cultural needs. You are required to do hands-on practical training in Australian Professional Skills Institute’s fully operational commercial training kitchens in East Perth. You will have the opportunity to undertake workplace training in patisserie, bakery, cake shops, hotel pastry department as a trainee pastry chef.
